Cabernet Sauvignon is the world’s most famous grape variety and is grown in all wine producing regions. Producing full-bodied red wines often with great cellar-ageing potential because of its tannins, Cabernet Sauvignon is the main variety used in many of the famous wines of Bordeaux, particularly from the Médoc and Graves. It is also the main component of Italy’s Super Tuscans e.g. Sassicaia and Tignanello. The flavours and aromas vary greatly from region to region, but blackcurrants, cherries, cedar wood, cigar box and eucalyptus are all associated with this grape, with the New World producing typically fuller, jammier wines and greener, herbal notes coming through in the Northern Hemisphere.
