Crement de Bourgogne is made using the same traditional method that it used in the making of Champagne. It is produced from 100% Pinot Noir grape which are manually harvested are then pressed slowly and then the resulting juice is fermented to produce a base wine wine, this is then given a second fermentation in the bottle with yeasts, this gives this Crement its effervescence, then once the bottles are disgorged there is a 'dosage' added to adjust the sweetness to the perfect level. |
