
"Rhubarb, originally cultivated by the Chinese 5000 years ago, is known mostly for its use in pies, crumbles and as an affordable British & Swedish sweet when dipped in sugar. It is well known for its medicinal uses as an aid to digestion & stimulation of the liver.
It is a full-flavoured naturally bitter plant, and as such forms an excellent flavour for cocktail bitters. It would also have been at its hey-day from the late 19th to mid-20th centuries, during the cocktail "Golden Era".
